Captain Cookie owners to open food incubator

The owners of Captain Cookie and the Milkman are opening a space in Northeast D.C. where local food truck owners can prep their food before hitting the road.

Tastemakers, the new food incubator, will occupy an 8,000-square foot former mayonnaise factory near the Brookland-CUA Metro station, Washington Business Journal reported Tuesday.

Kirk and Juliann Francis, the founders of Captain Cookie and the Milkman, started their cookies and milk business in 2012 with a food truck and opened the doors of their first brick-and-mortar location in the Shops at 2000 Penn two years later.

The co-owners told the Washington Business Journal they plan to spend more than $1 million on renovations to the future home of Tastemakers through self-financing and loans, and that they hope to open the space in August or September.

In addition to a commercial kitchen on site, Tastemakers will offer cold and dry storage, office space with a conference room, a demonstration kitchen and a retail area for up to eight vendors, according to Washington Business Journal.

Captain Cookie’s three local trucks will be parked at Tastemakers with six to 10 other trucks, Kirk Francis told the Washington Business Journal.
